How to turn a humble cauliflower into a comfy delicious porridge. 

( without the oats )

As the first chilly morning wafts in - so too the desire for some comforting, hot and gooey brekky.  

It's been almost 10 years since Desi and I adopted a paleo diet. We were astounded by the wonderful flavours we got to enjoy by cooking our own nutrient dense foods, clean and free of nasties (ie toxic seed oils, additives, sugars, grains etc). Nowadays we primarily eat an animal based diet, however on the odd occasion, especially during the cooler months, we love to eat something comforting with a hot and gooey delicious texture.

Say g'day to our "Cauli Porry". The perfect porridge fix. But with a more nutritious twist - and minus the oat-bloat. Made from cauliflower and a whole lot of lurve. You'll see a pic of thyself holding a whopping cauliflower as I marvel at its versatility. Thanks to its own subtle flavour it can handle pretty much any flavour your imagination can conjure! In all its many shapes and offerings you can count on it as always filling, low in carbs and super nutritious. And I promise if you follow our little recipe you're going to have one delicious dollop of Joy in your belly!  

The recipe below can be prepped in advance and then simply heated up in the morning in no time at all with an added topping of your choice. 

Ingredients:

One whole cauliflower broken into florets (if you can, grab an organic one).

Minimum one cup of milk of your choice (ie dairy or nut milk). I like to use bone broth for an extra nutritious kick. I say a minimum of 1 cup - as a starting point - or keep pouring until you've achieved your preferred consistency of gooeyness. 

2 or so tablespoons of either thick cream, coconut cream, or salted butter(for added gooey richness)

1 teaspoon turmeric and teaspoon cinnamon.

Pinch of salt

For the topping you can basically add what you love... the list is endless! Chopped activated nuts, or paleo granola, add some goji berries, or maybe just a good drizzle of quality honey or 100% maple syrup.  Of course you can make this more savory by adding chopped bacon bits on top, or chopped, sauteed-in- butter, mushies. 

How to:

Cover the florets in a large bowl, without water, and steam in the microwave for about 6 to 7 mins.

If microwaves aren't your thing simmer the florets in a saucepan covered in filtered water or steam them on the stovetop until very soft and then drain them thoroughly using a colander. 

Pop the florets into a processor, or you can use a hand blitzer. Blitz the living daylights out of them, slowly adding your liquid of choice, until you've reached the preferred level of gooey consistency. At this point you can pop it in a container and fridge it ready for the morning. 

When you're ready to eat it portion 2 cups into either a microwave or saucepan and heat it. Here you can add the extra cream or milk or butter if you like. Sprinkle in the turmeric and cinnamon and continue to mix it well. Sometimes instead of the cinnamon, I don't mind using Garam Marsala or Chinese 5 Spice instead.. for a bit of variety - spice of life and all that!

Once its hot serve it into a couple of bowls or mugs. Sprinkle the nut mix, gojis and syrup on top. And hello yumbo... you're ready to go! 

To be honest, Cauli Porry can be enjoyed any time of the day... whenever the comfort-food strings begin tugging at your soul!

    The first time Dee made this for me she sprinkled fried bacon bits over my serve. My eyeballs rolled back into my head like an old style pokies machine. Kaching.
